Sauce & Spices

1) 1 Miếng Ba Rọi khoảng 3 - 3.5lbs, rửa sạch với nước muối và giấm, lau khô, khứa nhẹ khoảng cách 1inch
Ướp 2 MC (tablespoon) rượu Mai Quế Lộ 15 phút
Sau đó ướp 2 MC (tablespoon) gia vị heo quay lên da và thịt cho đều

2) Khi ướp xong cho vào tủ lạnh, không đậy hay che miếng thịt, da phải để ở trên khoảng 24 tiếng cho da khô
Nếu không có thời gian thì cho vào lò nướng, da để ở trên, sấy với nhiệt độ 180F, 90 phút là da sẽ khô

3) Lúc air fry nhớ là 25-30 phút đầu lửa 350F là da để ở dưới, thịt để ở trên
Khi thấy miếng thịt vàng giống trong video thì lật da lên trên tăng nhiệt độ lên 375F (nếu thấy thịt chưa vàng đủ thì nướng thêm chút nữa, phải vàng giống trong video nha)

4) Nướng khoảng 15-20 phút, nghe da hết nổ và nổ đều là OK, tuỳ lò, để lâu quá sẽ cháy, mà không đủ lâu da không nổ hết nó sẽ cứng da

***Nhớ lót củ hành để cho miếng da bằng nhau, đều nhau thì da mới nổ đều

1) 1 piece of pork belly, about 3-3.5 lbs, washed thoroughly with salt water and vinegar, then patted dry, and lightly scored at 1-inch intervals.
Marinate with 2 tablespoons of rose wine for 15 minutes.
Then, marinate with 2 tablespoons of roasted pork seasoning, ensuring it is evenly distributed over the skin and meat.

2) After marinating, place the meat in the refrigerator, uncovered, with the skin facing upwards, for about 24 hours to allow the skin to dry.
If you don't have enough time, you can put it in the oven, with the skin facing upwards, and dry it at 180°F for 90 minutes.

3) When air frying, remember that for the first 25-30 minutes, set the temperature to 350°F, with the skin facing down and the meat facing up.
When the meat turns golden brown like in the video, flip the skin to the top and increase the temperature to 375°F (if the meat isn't golden enough, bake it a little longer; it needs to be golden like in the video).

4) Bake for about 15-20 minutes, until the skin stops crackling and crackles evenly. The time may vary depending on your oven; baking for too long will burn it, but not long enough will result in tough skin.

***Remember to place onions underneath to ensure the skin is even and flat, so that it crackles evenly.
